Ingredients

200g fresh udon noodles

3 tablespoons chili oil

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon rice vinegar

1 green onion, finely sliced

1 tablespoon sesame seeds

Fresh cilantro, for garnish

Optional: Sliced radishes or cucumbers for crunch

Instructions

Boil the Udon Noodles: In a large pot, bring water to a boil. Add the udon noodles and cook according to package instructions (usually around 2-3 minutes for fresh noodles). Drain and rinse under cold water to stop the cooking process.

Prepare the Sauce: In a small bowl, mix together the chili oil, minced garlic, soy sauce, sesame oil, and rice vinegar. This will create a fragrant and spicy sauce.

Combine: In a large mixing bowl, add the drained udon noodles. Pour the chili oil mixture over the noodles and toss them well to ensure they're evenly coated.

Add Toppings: Add sliced green onions, sesame seeds, and any optional toppings you desire. Toss gently to distribute everything evenly.

Serve: Transfer the noodles to serving plates, garnish with fresh cilantro, and enjoy warm or at room temperature for a quick meal!
