200g udon noodles

3 tablespoons chili oil

2 tablespoons soy sauce

1 tablespoon rice vinegar

2 garlic cloves, minced

1 teaspoon ginger, grated

1 green onion, finely chopped

1 tablespoon sesame seeds

Optional toppings: sliced cucumbers, cilantro, or a poached egg
