Ingredients

1 lb large shrimp, peeled and deveined

2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots)

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

2 tablespoons sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 tablespoon cornstarch (for thickening)

1 tablespoon water

2 green onions, chopped (for garnish)

Cooked rice or noodles (optional, for serving)

Instructions

Prep the Ingredients: Start by washing and chopping your mixed vegetables into bite-sized pieces. Peel and devein the shrimp if not already done.

Make the Sauce: In a small bowl, mix together the soy sauce, oyster sauce (if using), minced garlic, minced ginger, cornstarch, and water. Stir well until the cornstarch is dissolved and the mixture is smooth.

Heat the Pan: In a large skillet or wok, heat the sesame oil over medium-high heat until hot.

Cook the Shrimp: Add the shrimp to the pan and stir-fry for 2-3 minutes, or until they turn pink and opaque. Remove the shrimp from the pan and set aside.

Stir-Fry the Vegetables: In the same pan, add the mixed vegetables and stir-fry for about 3-4 minutes, or until they are tender-crisp.

Combine and Cook: Return the shrimp to the pan with the vegetables. Pour the sauce over the mixture and stir to coat everything evenly. Cook for an additional 1-2 minutes until the sauce thickens and everything is heated through.

Garnish and Serve: Remove from heat, garnish with chopped green onions, and serve immediately over cooked rice or noodles if desired.
