Ingredients

4 large croissants (day-old works best)

1 cup almond flour

1/2 cup confectioners' sugar

1/4 cup unsalted butter, softened

1 tsp vanilla extract

1/4 tsp almond extract

1/4 tsp salt

1 large egg (for egg wash)

1/2 cup sliced almonds

1/2 cup powdered sugar (for dusting)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Prepare Filling: In a medium bowl, combine almond flour, confectioners' sugar, softened butter, vanilla extract, almond extract, and salt. Mix until smooth and creamy.

Cut Croissants: Carefully slice each croissant in half horizontally, but not all the way through, creating a pocket.

Fill Croissants: Spoon or pipe the almond filling generously into each croissant pocket, spreading it evenly.

Prepare Egg Wash: In a small bowl, beat the egg. Brush the top of each filled croissant with the egg wash for a golden finish.

Add Almonds: Sprinkle sliced almonds on top of each croissant, pressing gently to adhere them.

Bake: Place the croissants on the prepared baking sheet and bake in the preheated oven for about 15-20 minutes, or until the tops are golden brown and flaky.

Dust and Serve: Allow the croissants to cool slightly, then dust with powdered sugar before serving. Enjoy them warm for the best experience!
