2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 cup whole milk

2 large eggs

1 teaspoon vanilla extract

2 cups peeled and diced apples (about 2 medium apples)

Oil for frying

Powdered sugar for dusting

Instructions
 

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg until well combined.

    In a separate bowl, mix the milk, eggs, and vanilla extract until smooth.

      Gradually pour the wet ingredients into the dry ingredients, mixing gently until just combined. Do not overmix; lumps are okay.

        Fold in the diced apples until evenly distributed throughout the batter.

          In a deep pot or fryer, heat oil to 350°F (175°C). Carefully drop spoonfuls of the batter (about a tablespoon each) into the hot oil, being cautious not to overcrowd the pot.

            Fry the fritter bites for about 2-3 minutes on each side or until they are golden brown and cooked through. Use a slotted spoon to remove them from the oil and place on a paper towel-lined plate to drain excess oil.

              While still warm, dust with powdered sugar and serve immediately for the best flavor and texture.
