Ingredients

4 cups all-purpose flour

1 ½ cups warm water (about 110°F or 43°C)

2 teaspoons active dry yeast

2 teaspoons sugar

2 teaspoons salt

2 tablespoons olive oil

1 teaspoon ground cumin (optional for flavor)

Instructions

Activate the Yeast: In a small bowl, mix the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Combine the Dry Ingredients: In a large mixing bowl, combine the flour, salt, and ground cumin if you're using it. Mix well to ensure the salt is distributed evenly.

Make the Dough: Create a well in the center of the flour mixture. Pour in the activated yeast mixture and olive oil. Using a wooden spoon, stir until the dough begins to come together.

Knead the Dough: Transfer the dough onto a floured surface. Knead the dough for about 10 minutes until it becomes smooth and elastic. If the dough is too sticky, dust with a little more flour as necessary.

First Rise: Place the kneaded dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 to 1.5 hours or until it doubles in size.

Shape the Bread: Once risen, punch down the dough to release the air. Divide the dough into 8 equal portions. Roll each portion into a ball and then flatten it into a circle about ¼ inch thick.

Second Rise: Place the shaped dough on a floured tray, cover them with a towel, and let them rise for another 30 minutes.

Cook the Bread: Preheat a skillet or griddle over medium-high heat. Cook each flattened dough piece for about 2-3 minutes on each side until it puffs up and has golden brown spots.

Serve Warm: Remove the bread from the skillet and keep it warm under a cloth until ready to serve. Enjoy it with dips, grilled meats, or your favorite stews!
