Asado Chicken and Sauteed Lemon Zucchini

For the Asado Chicken:

4 chicken thighs (bone-in, skin-on)

4 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon chili powder

Juice of 2 limes

Salt and pepper to taste

Fresh cilantro for garnish

For the Sautéed Lemon Zucchini:

2 medium zucchinis, sliced into half-moons

2 tablespoons olive oil

Juice of 1 lemon

Zest of 1 lemon

2 cloves garlic, minced

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine olive oil, minced garlic, smoked paprika, ground cumin, dried oregano, chili powder, lime juice, salt, and pepper. Mix well.

      - Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

        Cook the Chicken:

          - Preheat your grill or oven to 400°F (200°C).

            - If grilling, cook the chicken thighs skin-side down for about 6-7 minutes or until the skin is crispy. Flip and continue cooking for another 6-7 minutes or until fully cooked (internal temperature should reach 165°F/75°C).

              - If using an oven, place the marinated chicken thighs on a baking sheet lined with parchment paper, skin-side up. Roast for about 30-35 minutes or until the skin is crispy and the chicken is cooked through.

                Prepare the Sautéed Lemon Zucchini:

                  - While the chicken cooks, heat olive oil in a large skillet over medium heat.

                    - Add minced garlic and sauté for about 30 seconds until fragrant.

                      - Add sliced zucchini to the pan, sprinkle with salt and pepper, and cook for about 5-7 minutes until tender and slightly crispy, stirring occasionally.

                        - Once cooked, remove from heat and add lemon juice and lemon zest, mixing well to combine. Adjust seasoning if necessary.

                          Serve:
