1 lb ground beef (preferably lean)

1 tablespoon vegetable oil

2 cloves garlic, minced

1 tablespoon ginger, minced

1 small onion, finely chopped

1 bell pepper, finely chopped (red or green)

1 carrot, grated

1/4 cup soy sauce (low-sodium preferred)

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon sriracha (optional for heat)

1/2 cup water chestnuts, diced

1/4 cup green onions, chopped (plus more for garnish)

Fresh cilantro leaves for garnish

1 head of iceberg or butter lettuce, leaves separated

Cook the Beef: In a large skillet, heat the vegetable oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks, about 5-7 minutes. Drain off excess fat if necessary.
