Ingredients
  

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 cup cooked quinoa (cooled)

½ cup corn (fresh or thawed frozen)

½ cup black beans, rinsed and drained

¼ cup red onion, finely chopped

¼ cup cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon cumin

Salt and pepper to taste

Crumbled feta cheese (optional)

Instructions
 

Begin by preparing the quinoa according to package instructions. Allow it to cool completely once cooked.

    In a large mixing bowl, combine the diced avocados, cherry tomatoes, corn, black beans, red onion, and cilantro.

      In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper to create the dressing.

        Pour the dressing over the salad mixture and gently toss to combine, being careful not to mash the avocados.

          Add the cooled quinoa to the salad and gently fold it in until evenly mixed.

            If desired, sprinkle crumbled feta cheese on top for an extra layer of flavor.

              Serve immediately for the freshest taste or refrigerate for up to an hour to let the flavors meld.
