Baked Boursin Spaghetti Squash

Ingredients
  

1 medium spaghetti squash

8 oz Boursin cheese (or any creamy cheese spread)

1 cup cherry tomatoes, halved

2 cups fresh spinach, roughly chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon crushed red pepper flakes (optional)

¼ cup grated Parmesan cheese (for topping)

Fresh basil for garnish

Instructions
 

Preheat the oven to 400°F (200°C).

    Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the insides with 1 tablespoon of olive oil, and season with salt and pepper.

      Place the squash halves cut side down onto a baking sheet lined with parchment paper. Roast in the preheated oven for 30-35 minutes, or until the flesh is tender and easily shredded with a fork.

        While the squash is roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

          Add the cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften. Stir in the chopped spinach and cook until just wilted, about 2 minutes. Remove from heat.

            Once the spaghetti squash is done roasting, carefully flip the halves cut side up. Use a fork to gently scrape the flesh into strands.

              In a large mixing bowl, combine the spaghetti squash strands, Boursin cheese, and sautéed garlic-tomato-spinach mixture. Stir until well combined.

                Divide the mixture evenly between the spaghetti squash halves. Sprinkle each half with grated Parmesan cheese.

                  Return to the oven and bake for an additional 15-20 minutes, until the cheese is bubbly and golden.

                    Remove from the oven, garnish with fresh basil, and serve warm.
