Ingredients

1.5 lbs chicken thighs, boneless and skinless

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

2 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cayenne pepper (adjust to taste)

1 tsp salt

1/2 tsp black pepper

1/4 cup hot honey (store-bought or homemade)

2 tbsp olive oil

Chopped fresh parsley (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat.

Marinate Chicken: In a large bowl, combine the buttermilk with salt, pepper, garlic powder, and onion powder. Add the chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 1 hour (or overnight for best results).

Prepare Coating: In a separate bowl, mix the flour, paprika, cayenne pepper, and a pinch of salt. In another bowl, place the panko breadcrumbs.

Coat Chicken: Remove the chicken from the marinade, allowing excess to drip off. First, dredge each piece in the flour mixture, shaking off any excess, then dip into the panko breadcrumbs, pressing gently to ensure an even coating.

Arrange on Baking Sheet: Place the coated chicken thighs on the prepared baking sheet. Drizzle olive oil over the tops of the chicken to help them become crispy.

Bake: Bake in the preheated oven for about 25-30 minutes, or until the chicken is golden brown, cooked through (internal temperature should reach 165°F or 74°C), and crispy.

Prepare Hot Honey: While the chicken is baking, warm the hot honey in a small saucepan over low heat until it is runny and fragrant. If making homemade hot honey, simply combine honey with a pinch of cayenne pepper or chili flakes and stir.

Serve: Remove the chicken from the oven and let it rest for 5 minutes. Drizzle the baked chicken thighs generously with the hot honey. Garnish with chopped parsley before serving.

Enjoy: Serve your Baked Crunchy Hot Honey Chicken with a side of coleslaw or your favorite dipping sauce for a delightful and satisfying meal!
