Baked Feta Pasta

200g (7 oz) feta cheese

4 cups cherry tomatoes

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

300g (10.5 oz) pasta (such as penne or fusilli)

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a large baking dish, add the cherry tomatoes and minced garlic, then drizzle them with olive oil. Season with dried oregano, red pepper flakes, salt, and pepper. Toss gently to combine.

      Add the Feta: Place the feta cheese block in the center of the baking dish among the tomatoes. Drizzle a little olive oil on top of the feta and sprinkle with salt and pepper.

        Bake: Bake in the preheated oven for about 25-30 minutes, or until the tomatoes have burst and the feta is golden and creamy.

          Cook the Pasta: While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the rest.

            Combine: Once the baking is done, remove the dish from the oven and stir the tomatoes and melted feta together to create a creamy sauce. Add the cooked pasta to the baking dish and mix until the pasta is well coated. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.
