1 loaf of day-old French bread (or brioche), cut into 1-inch strips

4 large eggs

1 cup milk (whole or any preferred type)

1/4 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg (optional)

1 pinch of salt

1/4 cup all-purpose flour

1/2 cup panko breadcrumbs

Cooking spray or melted butter

Maple syrup and fresh fruit for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and spray lightly with cooking spray or brush with melted butter.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.

      Prepare the Breading Station: In a shallow dish, add the flour. In another shallow dish, pour the egg mixture. In a third shallow dish, spread the panko breadcrumbs.

        Coat the French Toast Sticks: Take a piece of French bread strip and dip it into the flour, shaking off the excess. Next, dip it into the egg mixture, allowing any excess to drip off. Finally, roll it in the panko breadcrumbs, ensuring it's well coated. Place the coated stick on the prepared baking sheet. Repeat this process for all the strips.

          Bake the French Toast Sticks: Once all the strips are arranged on the baking sheet, lightly spray them with cooking spray or brush with melted butter. Bake in the preheated oven for 15-18 minutes, flipping halfway through, until golden brown and crispy.
