6 large eggs

1 cup whole milk

1 cup all-purpose flour

1/4 teaspoon salt

1 teaspoon vanilla extract

1/4 cup unsalted butter (melted)

Powdered sugar (for serving)

Fresh lemon juice (for serving)

Optional toppings: fresh berries, sliced bananas, or maple syrup

Instructions
 

Preheat your oven to 425°F (220°C). Place a 9x13 inch baking dish or large cast-iron skillet in the oven to heat up.

    In a blender, combine the eggs, milk, flour, salt, vanilla extract, and melted butter. Blend on high speed for about 20-30 seconds until you achieve a smooth batter.

      Carefully remove the hot baking dish from the oven, and pour a little of the melted butter into the dish, swirling it around to coat the bottom evenly.

        Immediately pour the pancake batter into the hot dish—this will help achieve a fluffy rise.

          Return the dish to the oven and bake for 20-25 minutes or until the pancake is puffed up and golden brown around the edges.

            Once baked, remove the pancake from the oven and allow it to cool for a couple of minutes. It will slightly deflate.

              Dust generously with powdered sugar and squeeze fresh lemon juice over the top, if desired.

                Serve immediately with your choice of additional toppings such as fresh berries, bananas, or drizzled maple syrup.
