2 ripe bananas, mashed

1 cup rolled oats

1/2 cup whole wheat flour

1/2 cup fresh or frozen blueberries

1/4 cup almond butter (or any nut butter)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

A pinch of salt

1/4 cup chopped nuts (optional, such as walnuts or pecans)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well-combined.

      Combine Dry Ingredients: In another bowl, whisk together the rolled oats, whole wheat flour, baking powder, cinnamon, and salt.

        Combine the Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated. Gently fold in the blueberries and, if using, the chopped nuts.

          Form Cookies: Drop tablespoon-sized amounts of the cookie mixture onto the prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly with the back of a spoon to form cookie shapes.

            Bake: Bake in the preheated oven for about 12-15 minutes, or until the edges are golden brown and the center is set.
