Bananas Foster French Toast with Homemade Banana Bread

3 ripe bananas, mashed

1/3 cup melted butter

1 egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 cup sugar (adjust to taste)

1 cup all-purpose flour

1/2 teaspoon cinnamon (optional)

For the Bananas Foster Topping:

2 tablespoons unsalted butter

1/2 cup brown sugar

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

2 ripe bananas, sliced

1/4 cup dark rum (optional, for flambéing)

For the French Toast:

4 slices of homemade banana bread (from the recipe above)

2 eggs

1/2 cup milk

1 teaspoon vanilla extract

Pinch of salt

Butter (for cooking)

Instructions
 

Step 1: Make the Banana Bread

    Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

      In a mixing bowl, combine the mashed bananas with melted butter, stirring well until integrated.

        Add the beaten egg and vanilla extract. Mix until combined.

          In another bowl, whisk together the baking soda, salt, sugar, flour, and cinnamon (if using).

            Gradually add the dry ingredients into the banana mixture, stirring until just combined.

              Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

                Allow it to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

                  Step 2: Prepare the Bananas Foster Topping

                    In a skillet over medium heat, melt the butter. Add the brown sugar and stir until the sugar dissolves and the mixture is bubbly.

                      Stir in the vanilla extract and cinnamon.

                        Carefully add the sliced bananas, gently tossing to coat them in the sauce. Cook until the bananas are softened (about 2-3 minutes).

                          If using, remove from heat, carefully add dark rum, then return to the heat and flambé (ignite) for a brief moment to burn off the alcohol. Alternatively, skip this step and just serve the bananas in the sauce.

                            Step 3: Prepare the French Toast

                              In a shallow bowl, whisk together the eggs, milk, vanilla extract, and a pinch of salt.

                                Heat butter in a skillet over medium heat.

                                  Dip each slice of banana bread into the egg mixture, ensuring both sides are coated.

                                    Cook the slices in the skillet for about 3-4 minutes on each side or until golden brown.

                                      Step 4: Assemble and Serve

                                        Place the warm banana bread French toast on plates.

                                          Generously spoon the bananas Foster topping over each slice.

                                            Garnish with a drizzle of the sauce and, if desired, a sprinkle of powdered sugar or chopped nuts.
