1 lb chicken breast, cut into bite-sized pieces

1 cup cornstarch

1 egg, beaten

1 cup panko breadcrumbs

1 cup lettuce, shredded

1 cup cucumber, thinly sliced

1 cup carrots, shredded

1/2 cup green onions, chopped

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

Oil for frying

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust for spice preference)

1 tsp lime juice

Prepare the Chicken: In a bowl, mix the garlic powder, salt, and black pepper with the chicken pieces, and let them marinate for 15 minutes.

    Breading the Chicken: Set up a breading station: Place cornstarch in one bowl, beaten egg in another, and panko breadcrumbs mixed with a pinch of salt and pepper in the third bowl.

      Bread the Chicken Pieces: Dredge each piece of chicken in cornstarch, then dip in the egg, and finally coat with panko breadcrumbs, pressing gently to adhere.
