Ingredients
  

2 boneless, skinless chicken breasts

1 cup cornstarch

2 large eggs

1 cup panko breadcrumbs

1 cup white rice (uncooked)

1 cup broccoli florets

1 red bell pepper, thinly sliced

2 green onions, chopped

1 avocado, sliced

½ cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

2 tablespoons olive oil

Salt and pepper to taste

Sesame seeds and cilantro for garnish (optional)

Instructions
 

Prepare the rice: Cook the white rice according to package instructions. Fluff with a fork and set aside.

    Prepare the chicken:

      - Season the chicken breasts with salt and pepper.

        - Set up a dredging station: Place cornstarch in one bowl, beaten eggs in a second bowl, and panko breadcrumbs in a third bowl.

          - Dredge each chicken breast in the cornstarch, dip in the egg, then coat with panko breadcrumbs.

            Cook the chicken:

              - Heat olive oil in a large skillet over medium heat.

                - Cook the chicken breasts for 5-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and let rest for a few minutes before slicing into strips.

                  Blanch the broccoli:

                    - In the same skillet, add the broccoli florets and sauté for about 4-5 minutes until bright green and tender. Remove from skillet.

                      Make the Bang Bang sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, and sriracha until well combined.

                        Assemble the bowls:

                          - In each bowl, place a serving of rice as the base.

                            - Top with sliced chicken, sautéed broccoli, red bell pepper, and avocado slices.

                              - Drizzle with the Bang Bang sauce and garnish with green onions, sesame seeds, and fresh cilantro if desired.
