Bang Bang Chicken Bowl

Ingredients
  

2 boneless, skinless chicken breasts

1/2 cup cornstarch

1/2 cup panko breadcrumbs

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 cups cooked jasmine rice

2 cups mixed greens (spinach, arugula, or lettuce)

1 carrot, julienned

1 cucumber, sliced

1/4 cup green onions, chopped

1/4 cup fresh cilantro, chopped

1/2 cup Bang Bang sauce (mix together 1/4 cup mayonnaise, 2 tablespoons sweet chili sauce, 1 teaspoon sriracha)

Instructions
 

Prep the Chicken: Start by cutting the chicken breasts into bite-sized pieces. Season with salt, pepper, garlic powder, and onion powder.

    Coat the Chicken: Set up a station with three bowls: one with cornstarch, one with the beaten egg, and one with panko breadcrumbs. Dredge each piece of chicken in cornstarch, then dip into the egg, and finally coat with panko breadcrumbs. Repeat until all chicken pieces are coated.

      Cook the Chicken: In a large pan, heat about 1/4 inch of oil over medium heat. Once the oil is hot, add the chicken pieces in a single layer and cook for 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

        Prepare the Bowl: In each serving bowl, add a scoop of jasmine rice as the base. Layer on a handful of mixed greens, followed by julienned carrots and cucumber slices.

          Finish with Chicken and Sauce: Top each bowl with the crispy Bang Bang chicken, then drizzle generously with the prepared Bang Bang sauce. Sprinkle with chopped green onions and cilantro for garnish.
