Bang Bang Chicken Bowls

This recipe features crispy, golden fried chicken tossed in a delicious homemade Bang Bang sauce, served over a bed of fluffy jasmine rice. Ingredients
  

1 lb chicken breast, cut into bite-sized pieces

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

Oil for frying

Salt and pepper, to taste

2 cups cooked jasmine rice

1 cup cucumber, diced

1 cup shredded carrots

1 cup red cabbage, thinly sliced

4 green onions, chopped

1/4 cup cilantro, chopped

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon honey

1 tablespoon lime juice

Prepare the Bang Bang Sauce: In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until well combined. Set aside.

    Coat the Chicken: In one bowl, season the chicken pieces with salt and pepper. In a second bowl, put the cornstarch. In a third bowl, place the beaten eggs. In a fourth bowl, add the panko breadcrumbs. Dredge each piece of chicken first in cornstarch, then dip in the beaten eggs, and finally coat with panko breadcrumbs.

      Fry the Chicken: Heat oil in a large skillet over medium heat. Once the oil is hot, carefully add the breaded chicken pieces in batches, frying until golden brown and cooked through, about 4-5 minutes. Remove and drain on paper towels.

        Assemble the Bowls: In each serving bowl, add a scoop of cooked jasmine rice as a base. Top with crispy fried chicken, diced cucumber, shredded carrots, sliced red cabbage, and chopped green onions.

          Drizzle: Generously drizzle the Bang Bang sauce over the top of each bowl, followed by a sprinkle of fresh cilantro.
