Bang Bang Chicken Bowls

1 lb boneless, skinless chicken breasts

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

1 tbsp vegetable oil (for frying)

Salt and pepper to taste

2 cups cooked jasmine rice

1 cup shredded carrots

1 cup sliced cucumbers

1 avocado, sliced

¼ cup green onions, chopped

Sesame seeds for garnish

For the Bang Bang Sauce:

½ cup mayonnaise

2-3 tbsp sweet chili sauce (adjust for spiciness)

1 tsp sriracha (optional for extra heat)

1 tsp lime juice

Salt to taste

Prepare the Chicken: Season the chicken breasts with salt and pepper. Cut them into bite-sized pieces.

    Set Up Breading Station: In three separate bowls, place cornstarch in the first bowl, beaten eggs in the second, and panko breadcrumbs in the third.

      Bread the Chicken: Dredge each piece of chicken in cornstarch, shaking off excess. Dip into the egg and then coat with panko breadcrumbs. Set aside.

        Fry the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the breaded chicken pieces (you may need to do this in batches to avoid overcrowding). Cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on a paper towel.

          Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha (if using), lime juice, and salt. Mix well until smooth.

            Assemble the Bowls: In serving bowls, layer cooked jasmine rice, followed by shredded carrots, cucumbers, pieces of fried chicken, and sliced avocado.
