1 lb boneless, skinless chicken thighs

1 cup cornstarch

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional, for extra spice)

Vegetable oil (for frying)

1 cup cooked jasmine rice or quinoa

1 cup broccoli florets (steamed)

1 cup shredded carrots

½ cup green onions (sliced)

¼ cup cilantro (chopped)

½ cup bang bang sauce (recipe below)

For the Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

Prepare the Bang Bang Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Set aside.

    Marinate the Chicken: Cut the chicken thighs into bite-sized pieces. In a bowl, combine the cornstarch, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper. Toss the chicken pieces in the mixture until they are well-coated.

      Fry the Chicken: Heat enough vegetable oil in a large skillet over medium-high heat to cover the bottom (about ¼ inch deep). Once hot, add the coated chicken pieces in a single layer. Fry for about 5-7 minutes on each side until golden brown and cooked through. Remove and place on paper towels to drain excess oil.
