BBQ Chicken Grilled Cheese

Ingredients
  

2 cups shredded cooked chicken (grilled or rotisserie)

1/2 cup BBQ sauce (your favorite kind)

4 slices of sourdough or Texas toast bread

1 cup shredded sharp cheddar cheese

1/2 cup mozzarella cheese

2 tablespoons butter

1/4 cup sliced red onions (optional)

Fresh cilantro leaves for garnish (optional)

Instructions
 

In a medium bowl, combine the shredded chicken with the BBQ sauce. Mix well until all the chicken is coated in the sauce.

    Take two slices of the bread and butter one side of each slice generously. Place the buttered side down on a heated skillet or griddle over medium heat.

      On top of the bread in the skillet, layer half of the cheddar cheese, then half of the BBQ chicken mixture, some sliced red onions if you're using them, and top with half of the mozzarella cheese.

        Place the second slice of bread on top (buttered side up) and grill until the bottom is golden brown, about 3-4 minutes.

          Carefully flip the sandwich over and grill the other side until golden brown and the cheese has melted, about another 3-4 minutes.

            Remove the grilled cheese from the skillet and repeat the process with the remaining ingredients to make the second sandwich.

              Once both sandwiches are ready, slice them in half, garnish with fresh cilantro if desired, and serve warm.
