BBQ Chicken Quesadilla

2 cups cooked, shredded chicken

1 cup BBQ sauce (your favorite brand or homemade)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1 small red onion, thinly sliced

1 cup corn kernels (fresh or frozen)

1/2 cup fresh cilantro, chopped

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Optional: sour cream and avocado for serving

Instructions
 

In a large bowl, combine the shredded chicken and BBQ sauce until well coated. Adjust seasoning with salt and pepper as desired.

    Heat a large skillet over medium heat and add olive oil. Sauté the red onion until soft and slightly caramelized, about 4-5 minutes.

      Add the corn kernels to the skillet and stir for another 2-3 minutes. Remove from heat and set aside.

        Lay one tortilla flat on a clean surface. Sprinkle 1/4 cup of cheddar cheese, followed by the BBQ chicken mixture, sautéed onions, corn, and then top with 1/4 cup of mozzarella cheese.

          Place another tortilla on top and gently press down. Repeat this process for the remaining tortillas and filling.

            In the same skillet (or on a clean griddle), cook the quesadilla over medium heat for about 4-5 minutes on each side, or until golden brown and crispy. Make sure the cheese melts properly.

              Once cooked, remove from the skillet and let cool for a minute. Cut into wedges and garnish with fresh cilantro.

                Serve with sour cream and sliced avocado, if desired.
