Lo mein noodles are the foundation of this dish, providing substance and a delightful chewy texture. Typically made from wheat flour and egg, these noodles are thicker and softer than their counterparts, chow mein noodles. You can find lo mein noodles in the Asian grocery aisle, or you might prefer to use fresh varieties available at local markets. For a healthier alternative, consider using whole wheat or egg-free noodles, which can still deliver great taste and texture.

Ingredients

8 oz lo mein noodles

1 lb beef flank steak, thinly sliced

2 cups broccoli florets

3 cloves garlic, minced

1 inch fresh ginger, grated

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil

1/2 teaspoon black pepper

1/4 cup green onions, sliced (for garnish)

Sesame seeds (for garnish, optional)

Instructions

Cook the noodles: Bring a large pot of salted water to a boil. Add the lo mein noodles and cook according to package instructions, usually around 4-5 minutes. Drain and toss with a little sesame oil to prevent sticking. Set aside.

Prepare the beef: In a bowl, mix the sliced beef with 1 tablespoon of soy sauce, black pepper, and half of the minced garlic and ginger. Allow it to marinate for about 15 minutes.

Blanch the broccoli: In the same pot used for the noodles, add the broccoli florets and cook for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

Stir-fry the beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over high heat. Add the marinated beef in a single layer and sear it for about 2-3 minutes, until browned and cooked through. Remove the beef from the skillet and set aside.

Cook the garlic and ginger: In the same skillet, add the remaining tablespoon of vegetable oil, along with the remaining minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.

Combine the ingredients: Return the beef to the skillet, and add the blanched broccoli, lo mein noodles, soy sauce, oyster sauce, and hoisin sauce. Toss everything together over medium heat for 2-3 minutes, ensuring that all ingredients are evenly coated with the sauces.

Serve: Remove from heat, and garnish with sliced green onions and sesame seeds if desired. Serve immediately and enjoy your Beef & Broccoli Lo Mein!
