2 cups rice flour

1 cup coconut milk

1 cup water

1 cup sugar

2 teaspoons baking powder

1/4 teaspoon salt

2 large eggs

1/2 cup grated fresh coconut (optional)

2 banana leaves (for lining the baking dish)

1/4 cup butter, melted

1/4 cup shredded cheese (preferably Edam or quick-melting cheese)

1/4 cup sliced salted duck eggs (optional)

Extra coconut flakes for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). If you have a charcoal grill, you can use it as well for an authentic flavor.

    Prepare the Baking Dish: Soften the banana leaves by passing them over an open flame or boiling water, then line an 8-inch round cake pan with the leaves, ensuring the edges overhang for easy removal later.

      Mix the Batter: In a large mixing bowl, combine the rice flour, sugar, baking powder, and salt. Mix well to combine dry ingredients. In a separate bowl, whisk together the coconut milk, water, and eggs until smoothly combined.

        Combine Wet and Dry Ingredients: Gradually pour the wet ingredients into the dry mixture, stirring until well combined. Keep stirring until there are no lumps, and the batter becomes smooth.

          Add Extras: Fold in the grated fresh coconut (if using), then pour in the melted butter. Stir gently just until incorporated.

            Pour the Batter: Pour half of the batter into the prepared cake pan, spreading it evenly. Then, place slices of salted egg on top (if using), along with some cheese. Pour the remaining batter over the top.

              Bake: Place the pan in the preheated oven and bake for about 30-40 minutes, or until the bibingka is golden brown and a toothpick inserted into the center comes out clean.

                Finish with Toppings: Remove the bibingka from the oven, sprinkle the remaining cheese on top, and return it to the oven for an additional 5-7 minutes, just until the cheese is melted and bubbly.

                  Cool and Serve: Allow the bibingka to cool slightly before lifting it out of the pan using the overhanging banana leaves. Cut into wedges, serve warm, and garnish with extra coconut flakes if desired.
