1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons black peppercorns, coarsely crushed

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 medium onion, sliced

1 bell pepper (any color), sliced

3 cloves garlic, minced

1 thumb-sized piece of ginger, grated

2 green onions, chopped (for garnish)

Salt to taste

Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, oyster sauce, cornstarch, and half of the crushed black pepper. Mix well and let it marinate for at least 20 minutes to absorb all the flavors.

    Prepare the Stir-Fry Sauce: While the chicken is marinating, mix the remaining crushed black pepper with a pinch of salt and set it aside.

      Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

        Cook the Chicken: Add the marinated chicken to the hot skillet in a single layer. Sauté for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Remove the chicken from the skillet and set aside.

          Sauté the Vegetables: In the same skillet, add the onion, bell pepper, garlic, and ginger. Stir-fry for about 3-4 minutes, until the vegetables are tender yet crisp.

            Combine and Finish: Return the cooked chicken to the skillet with the sautéed vegetables. Add the reserved black pepper mixture, tossing everything together over medium heat for an additional 2-3 minutes to meld the flavors.

              Garnish and Serve: Remove from heat and garnish with chopped green onions. Serve hot with steamed rice or noodles.
