Ingredients

8 oz bow tie pasta

1 cup cherry tomatoes, halved

1 cup cucumbers, diced

1 bell pepper (red or yellow), diced

1/2 cup red onion, finely chopped

1 cup black olives, sliced

1 cup feta cheese, crumbled

1/4 cup fresh basil, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 tablespoon honey

Salt and pepper to taste

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil and add the bow tie pasta. Cook according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Veggies: While the pasta cooks, chop the cherry tomatoes, cucumbers, bell pepper, red onion, and slice the black olives. Place all the chopped vegetables in a large mixing bowl.

Make the Dressing: In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper until well combined.

Combine All Ingredients: Add the cooked bow tie pasta to the bowl with vegetables, pour the dressing over the salad, and toss gently to combine everything.

Add Cheese and Herbs: Fold in the crumbled feta cheese and chopped basil. Adjust seasoning with more salt and pepper if needed.

Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to let the flavors meld.

Serve: Serve chilled or at room temperature. Toss again before serving for best flavor.
