Ingredients

1 ½ cups all-purpose flour

1 cup rolled oats

1 cup mashed ripe bananas (about 2 medium bananas)

¾ cup brown sugar, packed

½ cup granulated sugar

½ cup unsweetened applesauce

½ cup Greek yogurt

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

½ cup chopped walnuts (optional)

½ cup mini chocolate chips (optional)

Powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan thoroughly to prevent sticking.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Whisk together until well blended.

Combine Wet Ingredients: In another bowl, beat together the mashed bananas, brown sugar, granulated sugar, applesauce, Greek yogurt, eggs, and vanilla extract until smooth and creamy.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

Add Nuts and Chocolate Chips: If desired, fold in the chopped walnuts and mini chocolate chips.

Pour Batter: Pour the batter into the prepared Bundt pan, spreading it evenly.

Bake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Cool Down: Once baked, remove from the oven and let the Bundt cake cool in the pan for about 15 minutes. Then carefully invert it onto a wire rack to cool completely.

Serve: Once cooled, dust the top with powdered sugar if desired. Slice and serve the Bundt cake warm or at room temperature. Enjoy it with a cup of coffee or tea for a delightful breakfast treat!
