Pimento cheese has a rich history steeped in Southern tradition. Often referred to as "the caviar of the South," this spread originated in the early 1900s, when cream cheese and pimentos were first combined to create a creamy, flavorful dip. Its roots can be traced back to the traditions of Southern cooking, where cheese and peppers were staples in many households. Initially, pimento cheese was a simple concoction made with just a few ingredients: cheese, pimentos, and mayonnaise.

Ingredients

1 lb ground beef (80/20 blend for juiciness)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

4 burger buns (your choice, toasted)

1 cup pimento cheese spread (store-bought or homemade)

1 cup baby spinach or arugula

1 medium tomato, sliced

1 avocado, sliced

Optional: pickled jalapeños for a kick

Olive oil for grilling

Instructions

Prepare the Patties: In a mixing bowl, combine the ground beef, garlic powder, onion powder, salt, and pepper. Mix gently until just combined, then shape into 4 equal patties, making a slight indentation in the center of each for even cooking.

Preheat the Grill: Preheat your grill or grill pan over medium-high heat. Lightly brush the grill grates with olive oil to prevent sticking.

Cook the Patties: Place the burger patties on the hot grill and cook for about 4-5 minutes on one side. Flip them and cook for an additional 3-4 minutes for medium-rare, or longer to your desired doneness.

Add Pimento Cheese: In the final minute of cooking, top each patty with a generous scoop of pimento cheese. Close the grill lid to allow the cheese to melt slightly.

Toast the Buns: While the cheese is melting, place the burger buns cut side down on the grill for about 1-2 minutes until they’re golden brown.

Assemble the Burgers: On the bottom half of each toasted bun, place a handful of baby spinach or arugula, followed by the cheeseburger patty. Layer on the tomato slices, avocado slices, and, if desired, pickled jalapeños for extra heat. Finally, crown with the top half of the bun.

Serve: Serve the burgers immediately with your favorite sides such as sweet potato fries or a fresh salad.
