Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon pure vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup pecans, chopped and toasted

1/2 cup white chocolate chips (optional)

Instructions

Toast the Pecans: Preheat your oven to 350°F (175°C). Spread the chopped pecans on a baking sheet and toast in the oven for about 8-10 minutes or until fragrant. Stir once halfway through to ensure even toasting. Remove and let cool.

Prepare the Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

Mix in Egg and Vanilla: Add the egg and vanilla extract to the butter-sugar mixture, mixing until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Avoid overmixing.

Fold in Add-ins: Gently fold in the toasted pecans and white chocolate chips (if using) until evenly distributed throughout the dough.

Shape the Cookies: Using a cookie scoop or tablespoon, drop heaping mounds of dough onto a parchment-lined baking sheet, leaving about 2 inches between each cookie to allow for spreading.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers look slightly soft.

Cool: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy these delicious butter pecan cookies warm, or store them in an airtight container for later.
