1 lb (450g) sirloin steak, cut into 1-inch cubes

2 tablespoons Cajun seasoning

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped (plus extra for garnish)

Salt and pepper, to taste

1 tablespoon olive oil

Juice of 1/2 lemon

Season the Steak: In a large bowl, toss the steak cubes with Cajun seasoning, ensuring each piece is well coated. Let it sit for about 15 minutes to absorb the flavors.

    Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering.

      Sear the Steak: Add the seasoned steak cubes to the skillet in a single layer, avoiding overcrowding. Sear for about 3-4 minutes on each side for medium-rare, or longer if desired. Remove the steak bites from the skillet and set aside on a plate.

        Prepare the Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant but not burnt.

          Combine and Finish: Return the steak bites to the skillet, toss them in the garlic butter, and add the lemon juice and chopped parsley. Stir to coat evenly. Season with salt and pepper to taste and cook for an additional minute to warm through.

            Serve: Remove from heat and transfer the steak bites to a serving dish. Garnish with extra chopped parsley if desired, and serve immediately.
