2 cups rolled oats

2 large apples, peeled, cored, and diced

1 cup milk (or non-dairy substitute)

1/2 cup maple syrup

1/4 cup brown sugar

1/4 cup unsalted butter, melted

2 eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup chopped pecans (optional)

1/2 cup caramel sauce (for drizzling)

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

    In a large bowl, combine the rolled oats, diced apples, cinnamon, nutmeg, baking powder, and salt. Mix well and set aside.

      In another bowl, whisk together the milk, maple syrup, brown sugar, melted butter, eggs, and vanilla extract until smooth.

        Pour the wet mixture over the oat mixture and stir until fully combined. If using, fold in chopped pecans for added crunch.

          Pour the oatmeal mixture into the prepared baking dish and spread it evenly.
