Ingredients
  

2 large carrots, peeled and grated

1 large apple (preferably a tart variety like Granny Smith), cored and grated

1/4 cup raisins

1/4 cup walnuts, roughly chopped

2 tablespoons fresh lemon juice

1 tablespoon honey or maple syrup

1/4 teaspoon ground cinnamon

Salt and black pepper to taste

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and grated apple.

    Add the raisins and chopped walnuts to the bowl.

      In a separate small bowl, whisk together the lemon juice, honey (or maple syrup), ground cinnamon, salt, and black pepper until well blended.

        Pour the dressing over the carrot and apple mixture. Toss everything together gently until the ingredients are evenly coated.
