Ingredients
  

1 cup rolled oats

2 cups almond milk (or any milk of choice)

1 medium carrot, grated

1/4 cup unsweetened applesauce

1/4 cup brown sugar (or maple syrup)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup raisins or chopped walnuts (optional)

Toppings: cream cheese drizzle (optional), shredded coconut, chopped nuts

Instructions
 

In a medium saucepan, combine the rolled oats, almond milk, grated carrot, applesauce, brown sugar, vanilla extract, cinnamon, nutmeg, and salt. Stir until well mixed.

    Bring the mixture to a boil over medium heat, then reduce the heat to low. Allow it to simmer, stirring occasionally, for about 5-7 minutes or until the oats are creamy and have absorbed most of the liquid.

      If you’re adding raisins or walnuts, stir them in during the last minute of cooking.

        Remove from heat and let it sit for a minute to thicken slightly.

          Serve hot in bowls and top with optional cream cheese drizzle, shredded coconut, or extra chopped nuts for added texture and flavor.
