1 lb (450g) bacon, chopped

4 large russet potatoes, peeled and diced

1 medium onion, diced

3 cups shredded sharp cheddar cheese

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup chopped green onions (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, reserving 2 tablespoons of bacon grease in the pan.

      Sauté the Potatoes and Onions: In the same skillet, add the diced potatoes and onions to the reserved bacon grease. Season with salt, pepper, garlic powder, onion powder, and smoked paprika. Sauté for about 10-15 minutes, or until the potatoes are golden and tender.

        Mix the Eggs: In a large mixing bowl, whisk together the eggs, milk, and a pinch of salt and pepper.

          Combine Ingredients: In a greased 9x13-inch casserole dish, layer half of the sautéed potatoes and onions, half the bacon, and half of the shredded cheese. Pour half of the egg mixture over the layers. Repeat the layers with the remaining ingredients, finishing with the cheese on top.

            Bake: Cover the casserole with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
