1 package (9 oz) cheese tortellini

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 can (10 oz) red enchilada sauce

1 cup salsa

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Sliced jalapeños, for garnish (optional)

Instructions
 

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat.

      Sauté Vegetables: Add the chopped onion and minced garlic to the skillet with the beef. Sauté until the onion becomes translucent, about 3-4 minutes.

        Combine Ingredients: Stir in the enchilada sauce, salsa, cumin, chili powder, salt, and pepper into the beef mixture. Let simmer for 5 minutes to combine the flavors.
