Ingredients

2 large chicken breasts, diced

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

4 large flour tortillas

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup fresh spinach leaves

1/2 cup cherry tomatoes, halved

1/4 cup ranch dressing (optional for serving)

Instructions

Marinate Chicken: In a medium bowl, combine diced chicken, minced garlic, olive oil, Italian seasoning, salt, and pepper. Toss until the chicken is evenly coated and let it marinate for at least 15 minutes.

Cook Chicken: In a large skillet over medium heat, add the marinated chicken. Sauté for about 6-8 minutes, or until the chicken is cooked through and no longer pink. Remove from heat.

Build the Wraps: Place the flour tortillas on a clean surface. In the center of each tortilla, layer about 1/4 of the cooked chicken, a generous sprinkle of mozzarella cheese, a tablespoon of grated Parmesan cheese, a handful of spinach leaves, and a few cherry tomato halves.

Wrap it Up: Fold in the sides of the tortilla and then roll from the bottom up to create a tight wrap. Secure with toothpicks, if necessary.

Toast the Wraps: Wipe the skillet clean and return it to the stove over medium heat. Lightly spray with cooking spray or add a bit more olive oil. Place the wraps seam side down in the skillet. Cook for 2-3 minutes on each side, or until golden brown and crispy.

Serve: Remove the wraps from the skillet, slice them in half, and serve warm with ranch dressing on the side for dipping.
