1 can (400g) black beans, drained and rinsed

1 cup canned diced tomatoes with green chilies

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ginger, grated

1 teaspoon cumin powder

1 teaspoon garam masala

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder (adjust to taste)

Salt, to taste

1 cup shredded cheese (cheddar or a cheese blend)

4 slices whole grain bread

2 tablespoons olive oil

Fresh cilantro, for garnish

Optional: Sliced avocado, for topping

Prepare the Vegetables: Heat olive oil in a skillet over medium heat. Add the chopped onions and sauté until translucent, about 3-4 minutes. Then add the minced garlic and grated ginger, cooking for another minute until fragrant.

    Add the Spices: Stir in the cumin powder, garam masala, turmeric, and red chili powder. Cook for 1-2 minutes to toast the spices slightly.

      Combine the Beans and Tomatoes: Add the rinsed black beans and canned diced tomatoes to the skillet. Stir well to combine all ingredients. Cook for 5-7 minutes until everything is heated through.

        Cheesy Delight: Reduce heat to low and stir in the shredded cheese. Mix until the cheese melts and creates a creamy consistency. Taste and adjust salt and spices as needed.

          Toast the Bread: While the bean mixture cooks, toast the whole grain bread slices until golden and crispy.
