Chicken Chow Mein with The Best Chow Mein Sauce

8 oz egg noodles or chow mein noodles

1 lb boneless, skinless chicken breast, thinly sliced

1 cup bean sprouts

1 cup sliced bell peppers (red, green, or yellow)

1 cup shredded carrots

1 cup snap peas

3 green onions, chopped

3 cloves garlic, minced

2 tablespoons vegetable oil (for stir-frying)

Sesame seeds (for garnish)

For the Chow Mein Sauce:

3 tablespoons soy sauce

2 tablespoons oyster sauce (or vegetarian alternative)

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sugar

1 teaspoon cornstarch mixed with 2 teaspoons water (slurry)

1 teaspoon sesame oil

Instructions
 

Prepare the Noodles: Cook the egg noodles according to the package instructions until al dente. Drain and set aside, drizzling with a little vegetable oil to prevent sticking.

    Make the Sauce: In a small bowl, mix together soy sauce, oyster sauce, hoisin sauce, rice vinegar, sugar, and set aside. In a separate bowl, mix the cornstarch slurry then add it to the sauce mixture. Stir until combined.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large wok or frying pan over medium-high heat. Add the sliced chicken and cook until it turns golden brown and is cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

        Stir-Fry the Vegetables: In the same pan, add the remaining tablespoon of oil. Add minced garlic, and stir-fry for about 30 seconds until fragrant. Next, add bell peppers, carrots, and snap peas. Stir-fry for about 2-3 minutes until tender-crisp.

          Combine All Ingredients: Return the cooked chicken to the pan along with the cooked noodles and bean sprouts. Pour the sauce over the mixture. Toss everything together to combine well and heat through, about 2-3 minutes.

            Garnish and Serve: Once everything is heated and evenly coated in sauce, remove from heat. Garnish with chopped green onions and sesame seeds. Serve hot.
