Chicken Ramen Stir Fry (30 minutes)

2 packs of instant ramen noodles (discard the seasoning packets)

2 tablespoons vegetable oil

1 pound boneless, skinless chicken breasts, sliced thinly

1 red bell pepper, sliced

1 cup snap peas, trimmed

1 carrot, julienned

3 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

1 tablespoon ginger, minced

4 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 teaspoon crushed red pepper flakes (optional)

Sesame seeds for garnish

Cook Ramen Noodles: Bring a pot of water to a boil. Add the ramen noodles and cook for about 3-4 minutes, or until just tender. Drain and set aside.

    Prepare the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the sliced chicken. Season with salt and pepper. Stir-fry for about 5-7 minutes, or until the chicken is cooked through. Remove the chicken from the skillet and set aside.

      Stir Fry Vegetables: In the same skillet, add the remaining tablespoon of oil. Toss in the sliced bell pepper, snap peas, and julienned carrot. Stir-fry for about 3-4 minutes until they are tender yet crispy. Add the minced garlic, ginger, and the white parts of the green onions, and stir-fry for another minute.

        Combine Ingredients: Add the cooked chicken back to the skillet along with the drained ramen noodles. Pour in the soy sauce, oyster sauce, sesame oil, and crushed red pepper flakes (if using). Gently toss everything together until well combined and heated through for about 2-3 minutes.

          Serve: Remove the stir fry from the heat. Serve immediately, garnished with the green parts of the chopped green onions and a sprinkle of sesame seeds.
