1 lb ground chicken

1/2 cup shredded cheddar cheese

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp onion powder

1/2 tsp black pepper

1/2 tsp salt

1/4 tsp red pepper flakes (optional for heat)

1 tbsp olive oil

1 bell pepper, cut into chunks

1 red onion, cut into wedges

Skewers (soaked in water if using wooden ones)

Instructions
 

In a large mixing bowl, combine the ground chicken, shredded cheddar, parsley, minced garlic, smoked paprika, onion powder, black pepper, salt, and red pepper flakes. Mix well until all ingredients are fully combined.

    Preheat your grill or grill pan over medium heat. If using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent burning.

      Form the chicken mixture into small sausage shapes or patties, about the size of a meatball.

        Thread the chicken sausages onto the skewers, alternating with chunks of bell pepper and red onion.

          Brush the skewers lightly with olive oil to prevent sticking.

            Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
