Chili Mac

This hearty dish combines tender elbow macaroni, ground beef or turkey, kidney and black beans, and zesty tomatoes, all simmered together with flavorful spices. Topped with melted sharp cheddar cheese, it’s a comforting meal perfect for any occasion. Easy to make in just 30 minutes, it’s sure to be a family favorite. Don't forget to garnish with fresh cilantro or green onions for an extra kick!

8 oz elbow macaroni

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juice)

2 cups beef or vegetable broth

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

2 cups shredded sharp cheddar cheese

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Cook the Macaroni: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Sauté the Meat: In a large skillet or pot, brown the ground beef or turkey over medium heat until fully cooked. Drain excess fat if necessary.

      Add Aromatics: Stir in the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

        Combine Ingredients: To the meat mixture, add the kidney beans, black beans, diced tomatoes, beef broth, chili powder, cumin, smoked paprika, salt, and pepper. Bring to a simmer.

          Incorporate Macaroni: Add the drained macaroni to the chili mixture. Stir well to combine and allow to simmer for about 10 minutes, stirring occasionally.

            Melt the Cheese: Gradually mix in 1.5 cups of shredded cheddar cheese until melted and creamy. Garnish with remaining cheese on top.

              Serve: Remove from heat and serve hot, garnished with fresh cilantro or green onions if desired.
