Chinese Beef and Broccoli

Ingredients
  

1 lb flank steak, thinly sliced against the grain

2 cups broccoli florets

1 bell pepper, sliced (optional for color)

4 cloves garlic, minced

1-inch piece of ginger, grated

1/4 cup soy sauce (low sodium recommended)

2 tbsp oyster sauce

1 tbsp cornstarch mixed with 2 tbsp water (slurry)

2 tbsp vegetable oil

1 tbsp sesame oil

1 tsp sugar

Salt and pepper to taste

Sesame seeds and green onions for garnish (optional)

Instructions
 

Marinate the Beef: In a bowl, combine the sliced flank steak, 2 tbsp soy sauce, 1/2 tbsp cornstarch, and a pinch of pepper. Let it marinate for at least 15-20 minutes at room temperature.

    Blanch the Broccoli: Bring a large pot of salted water to a boil. Add the broccoli florets and bell pepper (if using) and cook for 2-3 minutes until bright green and tender-crisp. Drain and immediately plunge them into an ice bath to stop the cooking. Set aside.

      Stir-fry the Beef: In a large skillet or wok, heat 1 tbsp of vegetable oil over high heat. Add the marinated beef in a single layer and stir-fry for about 2-3 minutes until browned. Remove and set aside.

        Cook the Aromatics: In the same pan, add the remaining 1 tbsp of vegetable oil, then add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant.

          Combine Ingredients: Return the beef to the skillet, add the blanched broccoli and bell pepper, and pour in the remaining soy sauce, oyster sauce, sesame oil, and sugar. Stir well to combine.

            Thicken the Sauce: Add the cornstarch slurry to the pan, stirring continuously until the sauce thickens and coats the beef and vegetables evenly. Cook for another 1-2 minutes.

              Serve: Taste and adjust seasoning with salt and pepper, if necessary. Serve hot, garnished with sesame seeds and chopped green onions over steamed rice or noodles.
