Ingredients
  

6 cups of day-old bread, cut into 1-inch cubes (such as brioche or challah)

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/4 cup granulated sugar

1 tablespoon vanilla extract

1 tablespoon ground cinnamon

1/4 teaspoon salt

1/2 cup maple syrup (for serving)

1/4 cup melted butter (for topping)

1/3 cup granulated sugar (for cinnamon sugar topping)

2 teaspoons ground cinnamon (for cinnamon sugar topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a standard muffin tin with cooking spray or butter.

    Prepare the Bread: In a large mixing bowl, combine the cubed day-old bread with the melted butter. Toss gently to coat the bread evenly. Set aside for a few minutes to allow the bread to absorb some of the butter.

      Make the Egg Mixture: In another bowl, whisk together the eggs, whole milk, heavy cream, sugar, vanilla extract, ground cinnamon, and salt until well combined.

        Combine: Pour the egg mixture over the bread cubes. Gently fold until all the bread is well coated in the custard mixture. Let it sit for about 10 minutes to absorb the flavors.

          Fill the Muffin Tin: Divide the soaked bread mixture evenly among the muffin cups, filling each cup about three-quarters full.

            Bake: Bake in the preheated oven for 25-30 minutes, or until the tops are golden brown and the muffins spring back when lightly pressed.

              Prepare Cinnamon Sugar Topping: While the muffins are baking, mix together the granulated sugar and ground cinnamon in a small bowl.

                Add Topping: Once the muffins are done baking, remove them from the oven. Brush the tops with melted butter and immediately sprinkle the cinnamon sugar mixture evenly over each muffin.

                  Cool slightly and Serve: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack. Serve warm with a drizzle of maple syrup.
