6 large ripe peaches, peeled and sliced

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1 tablespoon cornstarch

For the Cobbler Topping:

1 cup all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup whole milk

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

Optional for Serving:

Whipped cream or vanilla ice cream

Instructions
 

Preheat the oven to 350°F (175°C).

    Prepare the Peach Filling: In a large bowl, combine the sliced peaches, 1/2 cup sugar, vanilla extract, lemon juice, cinnamon, and cornstarch. Toss to mix well and set aside to marinate for about 10-15 minutes.

      Prepare the Cobbler Topping: In another large bowl, whisk together the flour, sugar, baking powder, and salt. Pour in the milk, melted butter, and 1 teaspoon vanilla extract. Stir until just combined; do not overmix.

        Assemble the Cobbler: Pour the peach mixture into a greased 9x13 inch baking dish, spreading it evenly. Then, spoon dollops of the cobbler batter over the peaches. It's okay if some of the peach filling peeks through.
