2 cups cottage cheese (preferably low-fat)

1 cup strawberries, hulled and sliced

1 cup pineapple chunks (fresh or canned)

1 medium banana, sliced

1 medium apple, cored and diced (preferably a sweet variety like Fuji or Honeycrisp)

½ cup blueberries

¼ cup honey or maple syrup (optional, for sweetness)

1 teaspoon vanilla extract

2 tablespoons chopped fresh mint (for garnish)

A squeeze of lemon juice (to prevent apple and banana from browning)

A pinch of salt (optional, to enhance flavors)

Instructions
 

In a large bowl, add the cottage cheese. If desired, stir in honey or maple syrup for added sweetness and vanilla extract for flavor.

    Prepare your fruits: hull and slice the strawberries, chop the pineapple (if using fresh), slice the banana, dice the apple, and rinse the blueberries.

      Combine the prepared fruits into the bowl with the cottage cheese. Gently fold everything together until the cottage cheese is evenly distributed among the fruits.

        Squeeze a little lemon juice over the apple and banana slices to prevent browning and enhance freshness.
