Cottage Cheese Pizza Bowl

Ingredients
  

2 cups cottage cheese (2% or whole)

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup bell pepper, diced (any color)

1/4 cup red onion, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon Italian seasoning

1/4 teaspoon crushed red pepper flakes (optional)

1 cup shredded mozzarella cheese

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a medium bowl, combine the cottage cheese, chopped spinach, cherry tomatoes, bell pepper, red onion, garlic powder, Italian seasoning, crushed red pepper flakes (if using), and a pinch of salt and pepper. Mix well until all ingredients are evenly incorporated.

      Drizzle the olive oil into a baking dish or oven-safe bowl. Pour the cottage cheese mixture into the baking dish, spreading it out evenly.

        Sprinkle the shredded mozzarella cheese generously over the top of the cottage cheese mixture.

          Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the edges of the mixture start to golden.

            Once done, remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.
