Country Apple Fritter Bread

2 large apples, peeled, cored, and diced (Granny Smith works well)

2 cups all-purpose flour

1 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Additional cinnamon for sprinkling

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and set aside.

    In a medium bowl, combine diced apples with 1 tablespoon of granulated sugar and a pinch of cinnamon. Set aside to let them absorb flavors.

      In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

        In another bowl, mix melted butter, the remaining granulated sugar, eggs, vanilla extract, and buttermilk until well combined.

          Slowly add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the apple mixture gently.

            Pour half of the batter into the prepared loaf pan. Sprinkle evenly with half of the remaining apples and then pour the rest of the batter over the top. Finish by layering any leftover apples on the top.

              Bake in the preheated oven for 55-65 minutes or until a toothpick inserted into the center comes out clean.

                Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

                  While the bread is cooling, prepare the glaze by whisking together powdered sugar and milk until smooth. Drizzle across the cooled apple fritter bread and sprinkle with a pinch of cinnamon.
