Creamy Broccoli and Chicken Penne

8 oz penne pasta

1 lb boneless, skinless chicken breasts, diced

2 cups broccoli florets

3 tablespoons olive oil, divided

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. In the last 2 minutes of cooking, add the broccoli florets. Drain and set aside.

    Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced chicken, season with salt and pepper, and cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Creamy Sauce: In the same skillet, add the remaining 2 tablespoons of olive oil. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer. Reduce heat to low, then stir in the heavy cream and Italian seasoning. Allow the sauce to thicken for about 3-5 minutes.

        Combine Everything: Once the sauce is thickened, add the cooked chicken and drained pasta to the skillet. Toss everything together gently to coat the pasta and chicken in the creamy sauce. Stir in the grated Parmesan cheese until melted and smooth. Adjust seasoning with more salt and pepper if needed.
