Ingredients

8 oz fettuccine or pasta of choice

1 lb chicken breast, sliced into thin strips

2 tbsp Cajun seasoning

2 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to the package instructions until al dente. Drain and set aside.

Season the Chicken: In a bowl, toss the chicken strips with Cajun seasoning, ensuring they are evenly coated.

Sauté the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the seasoned chicken and cook for about 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add the chopped onion and cook for 2-3 minutes until softened. Add minced garlic and sliced red bell pepper, cooking for an additional 2-3 minutes until the peppers are tender.

Make the Sauce: Reduce the heat to medium. Pour in the heavy cream and chicken broth, stirring well to combine. Allow the mixture to simmer for 3-5 minutes until slightly thickened.

Combine Ingredients: Stir in the cooked chicken and Parmesan cheese, mixing until everything is well combined. Season with salt and pepper to taste.

Add Pasta: Add the cooked pasta to the skillet, tossing it gently in the creamy sauce until the pasta is evenly coated.

Serve: Garnish with freshly chopped parsley before serving. Enjoy!
