Ingredients

1 medium head of cauliflower, cut into florets

2 tablespoons unsalted butter

1/4 cup heavy cream (or milk for a lighter option)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

Salt and black pepper to taste

Fresh chives or parsley, chopped (for garnish)

Instructions

Prepare Cauliflower: Fill a large pot with water and bring it to a boil. Add the cauliflower florets and cook for about 10-12 minutes or until they are fork-tender.

Sauté Garlic: In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned. Remove from heat.

Drain Cauliflower: Once the cauliflower is cooked, drain it well and return it to the pot. This will help remove excess moisture.

Mash Cauliflower: Begin mashing the cauliflower with a potato masher or fork until you achieve a smooth consistency. For a creamier texture, use an immersion blender or food processor.

Combine Ingredients: Slowly add the sautéed garlic with butter, heavy cream (or milk), and Parmesan cheese to the mashed cauliflower. Mix well until everything is fully incorporated and creamy.

Season: Season with salt and black pepper to taste. Adjust the cream and cheese to achieve your desired creaminess.

Garnish and Serve: Transfer the creamy cauliflower mash to a serving bowl, garnish with chopped chives or parsley, and serve warm.
