Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz (225g) rotini pasta

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Optional: Red pepper flakes (for heat)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini and cook according to package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken pieces and season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

Prepare the Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute until fragrant but not burned.

Make it Creamy: Pour in the heavy cream, stirring constantly. Allow it to simmer for 2-3 minutes to thicken slightly.

Incorporate Cheese: Gradually sprinkle in the grated Parmesan cheese while stirring until the cheese is melted and the sauce is creamy. If the sauce is too thick, you can add a splash of pasta water.

Combine: Return the cooked chicken to the skillet, and add the drained rotini. Toss everything together until well-coated in the sauce. Taste and adjust seasoning if necessary.

Serve: Divide the pasta among plates or serve in a family-style dish. Garnish with fresh parsley and, if desired, a sprinkle of red pepper flakes for added heat.
